A beginner's guide to baking Ocean Prime's famous Warm Butter Cake

We teamed up with Chef Jason Shelley of Ocean Prime D.C. to bring you a simple at home recipe for Ocean Prime's infamous Warm Butter Cake. (YUM)

Follow the step-by-step instructions below and we can assure you the guests at your next dinner party will be begging for your secret recipe. You're welcome.


Cake (yields 6 servings):

  • 1.5 lb unsalted butter (6 sticks)
  • 1.5 lb sugar
  • 0.5 lb cream cheese
  • 6 eggs
  • 1 tbsp vanilla extract
  • 1.5 lb flour

Buttermilk soak:

  • 1 1/2 cups of sugar
  • 1/4 pound margarine
  • 1 tbsp vanilla extract
  • 1/4 tsp baking soda
  • 1/3 cup buttermilk


Cake batter:

  1. Mix butter and sugar with a kitchen mixer until fully mixed (about 7 to 8 minutes)
  2. Add cream cheese, and continue mixing until fully mixed
  3. With your mixer on low speed, add eggs one-by-one and vanilla extract
  4. Scrape the bottom and sides of your kitchen mixer to make sure everything is mixed in
  5. Once you are sure everything is mixed well, add flour in slowly. (Make sure to not overbeat flour)

Buttermilk soak:

  1. Add all items to medium saucepan, and heat until margarine has completely melted (do not boil)
  2. Set aside until cakes are ready


  1. Arrange 6-8 torte molds on a flat, parchment lined sheet tray
  2. Very lightly spray insides of molds with pan release
  3. Place about 2 cups of batter into each mold
  4. Pat down batter until it is level
  5. Bake at 325 for 20 minutes
  6. Rotate and bake for another 20 minutes, or until golden brown
  7. Once removed from oven, press down on tops of cakes with a sillpat to level and break off excess cake
  8. Poke about 20 random holes with a wooden skewer, all around each cake
  9. Ladle 1.5 ounces of the buttermilk soak onto each cake while they are still hot
  10. Remove cakes from molds while still hot

Serving your Warm Butter Cake

Create a fresh raspberry puree:

  • 1/2 cup sugar
  • 1/4 cup water
  • 12 ounces raspberries


  1. Place sugar and water in a small saucepan over medium heat, stir and bring to boil
  2. Reduce heat and simmer until sugar is completely dissolved, remove from heat
  3. Place raspberries and syrup in a blender and puree until smooth
  4. Pour puree over your warm butter cake and serve with fresh berries and vanilla ice cream
