If going vegetarian, or just cleaning up your diet in general, is on your list of things to accomplish in 2019, Bettina Stern and Suzanne Simon are making it just a bit easier. The co-founders of Georgetown's popular vegetarian taco brand, Chaia Tacos, opened the doors of their second outpost today in Mount Vernon Triangle.
What started as a pop-up stand at farmers' markets in 2013 has now grown to include two brick and mortar locations centered around menus made entirely from seasonal vegetables. The newest locale will retain the vegetable-centric mindset, but with an expanded menu, including the "beyond tacos" section, and libations ranging from craft beer, cocktails on tap (we are particularly intrigued by the apple shrub toddy), nitro cold brew from Vigilante Coffee and elderberry kombucha from Wild Kombucha.
